Apple, Walnut, Chicken Salad

Ingredients
1 # chicken breast (boneless & skinless, diced)3 oz. baby carrots (grated)1/4 c red pepper (diced)2 scallions (green and white-chopped)1 oz. red onion (diced)1/2 c celery (chopped)1 apple (chopped)1/4 c walnuts (chopped)Dressing:4 Tbsp. Mayonnaise (low fat)Ranch dressing (low fat)1/4 c greek yogurt (no fat)
Directions
Saute chopped chicken breast pieces in a pay coated with spray til no longer pink. I added some dried oregano and fresh black pepper. Cool and combined all the vegetables with the chicken. Mix the dressing in a small bowl and stir into the salad mixture. Refrigerate to chill and serve on a bed of fresh greens.
