Crock Pot Pork Carnitas tacos

1 1/2 lbs pork roast (I used a pork tenderloin)1 tsp salt1 tsp black pepper2 tsp dried oregano1 tsp cumin1 onion - cut into 8 large pieces4 cloves garlic1 5-ounce can green chilies12 corn tortillas1 jar salsa or salsa verde1 cup sharp cheddar cheese - shredded1/2 cup sour cream
1) Season pork well with all seasonings. Place in crockpot. Place onion chunks, garlic and green chilies on top.
2) Cook on low for 8 hours.
3) Prior to serving, shred meat.
4) Place tortillas on a baking sheet and bake at 350 for about 8 minutes. They should be a little crunchy but still flexible.
5) Serve shredded pork, salsa, cheese, and sour cream on tortillas. Fold tortillas like a taco.
Serving Size: Makes 12 tacos - 6 servings
