Moroccan Chicken with Chickpeas and Couscous

Ingredients
1 tbsp canola oil1 pound boneless skinless chicken breasts, cut into bite sized pieces1 (8 oz) can diced tomatoes, drained1 (8 oz) can tomato sauce1 can chickpeas, drained and rinsed (approx. 1-1/2 cups)1 tbsp curry powder (or more to taste)Salt to taste3 cups cooked couscous
Directions
Heat a large saute' pan over medium heat.
Add the oil and the chicken.
Cook, stirring occasionally, until the outside of the chicken is browned, about 3 minutes.
Add the tomatoes, tomato sauce, chickpeas, and curry powder. Bring to a simmer, then lower heat and cook until chicken is cooked through, stirring occasionally.
Add salt to taste. Serve the chicken mixture over the cooked couscous.

    This is tasty! I recommend cooking everything together long enough to get rid of the "raw" taste in the tomatoes and to soften the chickpeas a little bit. - 4/13/07
