Crock Pot Stuffed Peppers

Ingredients
1 lb lean ground beef3 cups uncooked brown rice1 package of frozen corn1 package of frozen onions1/2 package of fat free cream cheese12 green peppers (more or less depending upon size of peppers)water as needed
Directions
Layer ingredients into crock pot, except for green peppers: ground beef first, then corn, onions, brown rice. Add water as needed (at least one cup)

Cover and cook on low for 3 hours. Dice in cream cheese and mix. Cook for another 3 hours.

Serve as is or make stuffed peppers:
Core green peppers, place mixture inside. Bake in 350 degree oven for about 35 minutes. Top with fat free sour cream if you'd like.

    This was a very good and filling recipe, we did use fresh tomatoes to reduce sodium and used lite salt. We will make this recipe again. - 8/13/08
