Spinach & Sharp Chedder Omlet

Ingredients

2 lg organic eggs1/2 c fresh spinach1 oz sharp cheddar shredded
Steam Spinach
Heat small pan on med with drizzle of extra virgin olive oil
While spinach is steaming whisk eggs together and pour into skillet
Once egg is cooked majority of the way through add spinach (squeeze out excess water first) and cheese to one 1/2 of egg use spatula to fold other half of egg cook for a couple minutes flip and cook a couple more minutes on the other side.
Put on plate and enjoy!
