Roasted Balsamic Sweet Potatoes

Ingredients
1/4 Cup balsamic vinegar1 Tbsp. packed light brown sugar1/2 stick butter1 tsp coarse salt3 large swee potatoes peeled and cut in 1 inch chunks
Directions
Preheat oven to 400.
In a skillet over medium heat bring balsamic and sugar to boil, stirring until sugar dissolves. Reduce heat and simmer until vinegar thickens slightly, about 3 minutes. Add butter and salt; stir until butter melts.
Add potatoes to skillets and toss to coat.

Season potatoes with ground black pepper and spread on a fimmed, foil lined and oiled baking sheet. Bake until tender and golden, stirring occasionally, about 40 minutes.
