Ingredients
FF RicottaGrated ParmesanParsleyPepperFF MarinaraFF Polenta tube (sun dried tomato)Basil leavesShredded Part skim Mozzarella
Directions
Preheat oven to 375. Spray a 9 x 13 pan with non stick spray. Stir together ricotta, parm, chopped parsley and pepper in bowl. Spread 1/2 cup marinara in baking dish. Arrange 12 polenta slices over sauce, top each round with 2 T ricotta mixture and 1 basil leaf. Place 12 polenta rounds on top. Spoon remaining marinara sauce over polenta. Sprinkle with mozzarella.
Cover with non stick foil. Bake until heated and bubbly, about 30 minutes. Let stand 30 minutes before serving.
