Ingredients
Directions
1 graham crust 1 1/2 blocks medium-firm tofu3/4 cup semi-sweet chocolate3/4 cup cocoa powder1/2 cup white sugar1 tbsp vanilla2 tbsp lemon juiceFresh strawberries or other fruit to decorate (recipe calculated with 8 strawberries)The recipe calculations represent 1/8th of the cake, but half of this serving (1/16th size slice) is satisfying as it makes a very rich and chocolate-y treat!
Preheat oven to 350 F.
In a blender or food processor, blend the tofu until creamy, and add the cocoa, sugar, vanilla and lemon juice. Blend until creamy.
Meanwhile, melt the chocolate in the microwave and blend this into the mixture too.
Pour into the graham crust and bake in the oven for 20-25 minutes, or until firm (I took it out after about 22.)
Cool in the fridge and enjoy!
