Susan's Gluten Free Chocolate Chip Muffins

Ingredients
4 cups dry oatmeal5 eggs, beaten3 Bananas, over-ripe (if thawed, include liquid)3/4 cup peanut butter1/2 cup brown sugar1 cup chocolate chips
Directions
Preheat oven to 350. Spray 2x12 cup muffin tins with non-stick spray. Set aside.
Beat the eggs until frothy. Add peanut butter, brown sugar and brown sugar. Blend until smooth and liquid (the more ripe the bananas, the smoother it will blend). Stir in oatmeal and chocolate chips. Blend well.
Fill each muffin cup with approximately 1/4 cup batter until all 24 muffin cups are equally filled.
Bake for 25-30 minutes until light brown edges around muffins.
