cheesy eggs and potato

3 large eggs3 egg whites or egg white substitue1/4 cup chedder cheese 2% milk1 large russet potato.2 tbls Promise fat free margarinesalt and pepperToast (optional)
Place potato in a pot and cover with water boil till tender. Remove potato and cut into medium size chunks skin and all. Heat skillet and add margarine and potatoes ..season with salt and pepper. cook until desired color. Remove from pan and in a seperate bowl beat eggs and egg white and add to pan. Scramble the eggs till done turn off pan and sprinkle with cheese cover pan with foil. If you desire you can mix the cheese in the egg then cover with foil. Serve with potatoes and toast.
