- 2 cans Rotel- 2 cans chicken broth- 2 chicken breasts, raw and preferrably frozen- 1 can of sweet corn- 1 packet of taco seasoning- 1 cup water- 1 can black beans, drained and rinsed- 1 can kidney beans, drained and rinsed- 1 cup onion, chopped- 1 cup sour cream- 1 cup shredded cheese
Place all of the ingredients except sour cream and shredded cheese in crock pot. Set crock on low for 8 hours. Once finished cooking, shred chicken with a fork. Serve in bowls with sour cream and cheese on top. Goes well with corn chips and a side salad.
