Use peeler to slice zucchini into ribbons, grill with drizzle of olive oil. Meanwhile place salad ingredients in large bowl. Allow zucchini to cool before adding to salad. While Zucchini cools whisk together olive oil, lemon, sea salt and fresh ground pepper. Once cool, add zucchini and dressing. Toss and serve immediately.
