Broccoli Farro avgolemeno substitute MOOSEWOOD

Ingredients
2 T olive oil1 cup onion chopped3 cup broccolie florets chopped3 garlic cloves4 cups mushroom stock2 eggs1/3 - 1/2 c fresh lemon juice1 cup cooked farro1/2 t salt and 1/4 t pepper (or to taste)
Directions
brown onion and garlic in oil until onion translucent.
add broccoli cook 2 mins until bright green (add salt and pepper too)
add 3 cups stock
bring to boil and simmer till veg is getting soft (but not too soft)
Remove from heat (LET IT SIT FOR A GOOD WHILE)
whisk lemon and eggs; add remaining 1 cup of stock
add 1 cup of the warm stock to the whisked eggs and mix.
Pour this mixture back into the soup slowly.
Slowley heat up soup, but do not boil.
BE CAREFUL NOT TO CODDLE THE EGGS!
