Moroccan Chicken

Ingredients
However much chicken you want (it's not calculated in to the recipe)2 Tbsp olive oil1 tsp salt1 lg onion, chopped5 cloves minced garlic1 cup chopped carrot4 med celery1/2 tsp ground ginger1 tsp paprika1 1/2 tsp cumin1 tsp oregano1/2 tsp cayenne pepper1/2 tsp tumeric3c chicken broth2 cup canned, diced tomatoes3c canned, drained chickpeas4c sliced zuccini (thick)2 Tbsp lime juice
Directions
Brown chicken in the olive oil in the skillet. Remove chicken from the skillet and set aside.

In the same skillet:

Saute onion, garlic, carrots, and celery in the skillet. When tender add spices and stir fry for about 1 min.

Add tomatoes and broth. Return chicken to pan, reduce heat to low and simmer 10 min.

Add chickpeas and zucchini to pan and simmer, covered for 15 min.

Stir in lemon juice and serve.
