Spinach and Steel Cut Oats

Ingredients
1-2 Tsp Olive Oil1 clove garlic, or equivalent 1 small onion, chopped1 cup sliced portabello mushrooms, or whatever you like2 cups fresh baby spinach 1 cup dry steel cut oats, cooked per pkg directions1 tbsp chia seeds per servinghot sauce to taste, to rev metabolism- optional
Directions
Cook steel cut oats per package directions.
Sautee onions, mushrooms and garlic in olive oil. Add spinach, and just til wilted.
Stir into oats, and top with chia seeds and hot sauce, if desired. Makes 4 servings.
