Creamy green/puy lentils

Ingredients
125g puy / green lentils1 tbsp olive oil1 red onion (chopped)1 garlic clove (chopped)1/2 tsp dried thyme or 2 sprigs fresh (crushed)1/2 tsp coriander seeds1/2 tsp mustard seeds125ml unsweetened apple juice30g ricotta cheese
Directions
1) Place lentils in a saucepan and cover with cold water. Bring to the boil and cook for 20 minutes.

2) Meanwhile, place the olive oil in a frying pan and fry the onions, garlic, thyme and seeds, stirring frequently, for 10 minutes or until the onions are soft and golden.

3) Drain the lentils and add them to the onion mixture. Add the apple juice and bring to the boil. cook until reduced to about 4 tablespoons. Stir in the ricotta, and heat through.

    I made this and added a slices of low fat turkey sausage. Pretty tasty. My boyfriend wasn't too keen but I just loved it. - 1/24/08
