Apple Zucchini Muffins

1.5 cups unbleached white flour.5 cup oat bran1.5 teaspoons baking powder.5 teaspoon baking soda.5 teaspoon of ground cinnamon.25 teaspoon salt2 eggs.75 cup plain nonfat or greek yogurt.75 cup brown sugar, packed.5 teaspoon pure vanilla extract1 cup grated zucchini1 cup peeled, cored and chopped apples
Preheat oven to 350 degrees. Lightly oil muffin tin. Place a paper liner in each cup.
Sift together flour, oat bran, baking powder, baking soda, cinnamon, and salt. Stir to mix evenly.
In a separate bowl, beat the eggs. Add yogurt, brown sugar, and vanilla and beat until mixed. With a rubber spatula, fold in zucchini and apples.
Stir wet ingredients into dry ingredients until just blended.
Spoon about 1/3 cup of batter into each muffin cup. Bake for 15 minutes, rotate the muffin tin and then bake another 10-15 minutes.
When a paring knife inserted into muffin comes out clean, muffins are done.
Remove muffins and cool on wire rack.
