Orange Cranberry Muffins

Ingredients
2.5 cups unbleached flour.5 cups whole wheat flour2 eggs6 TBS canola oil.25 cups sugar (white or brown)1 TBS baking powder.50 tsp salt2 cups freshly squeezed orange juice (from about 5 large oranges)1 cup sweetened dried cranberries
Directions
Blend all dry ingredients except for the cranberries in a medium bowl. Add wet ingredients until fully blended. Mix in cranberries. Let sit for 5 minutes. Scoop 1/4 cup into each muffin cup. Makes about 21 muffins. Bake at 350 degrees until toothpick comes out clean. About 25-30 minutes
