Atlantic salmon 100gAlfalfa sprouts 0.25 cupIceberg lettuce 0.25 cup - shreddedYellow sweet corn, canned - 0.25 cupCherry tomato, - 1 dicedAvocado - 0.25 fruit dicedCucumber - 0.25 cup, peeled and dicedBaby potato - approx 50g
Mix all salad ingredients together (except potato).
Heat frying pan with one table spoon of olive oil.
Cook salmon in pan until brown and crispy on both sides
Cook potato in microvave for 90 seconds whole with skin.
Add one table spoon of olive oil and one table spoon of balsamic vinegar to salad and toss. Serve
