Chicken Won-Ton Soup

4 oz. shitake mushrooms2 tsp. canola oil5 cups chicken broth2 cups water20 mini chicken cilantro won-tons (I used Trader Joe's)1/4 cup soy sauce (can use less if want lower sodium)1/2 tsp. sesame oil2 cups chopped cabbage3 scallions - sliced
Remove and discard the stems of the shitakes. Wipe the shitakes clean with a damp paper towel. Cut the shitake caps into thin slices.
In a large saucepot, heat the canola oil. Add the shitakes and saute until soft. Pour in the broth and water and bring to a boil. Add the won tons and cook about 3 minutes. Reduce the heat and stir in the soy sauce, sesame oil, cabbage and scallions. Simmer 2 minutes. Remove from heat and enjoy!
