Stuffed Yellow Bells w/ TriTip

Ingredients
6 peppers1 cup diced tomatoes1.5 cups salsa1 cup cooked brown rice1 cup onions10 oz of trimmed bbq tri tip1 tablespoon of canola oil1 tablespoon of butter1 clove garlic
Directions
Dice tri tip and cook rice (1 T of butter and salt to flavor)and then mix with 3/4 cup salsa.

Sautee onions and 1 whole bell pepper, when soft, add tomatoes and garlic. Sautee one more minute until tomatoes are soft.

Mix meat/rice mixture with sautee'd vegetable mixture and then stuff the remaining 5 bell peppers.

Lay in dish that has the other 3/4 cups of salsa mixed with about 1/2 cup of water at the bottom, cover and bake for 45 minutes.

Serving Size: 1 Stuffed Bell per serving. Makes 5.
