Mock Rice Pilaf

Ingredients
16 oz frozen bag cauliflower, thawed4 green onions8 oz canned sliced mushrooms5 T smart balance1 T olive oil3/4 low-sodium, 99% fat free cup chicken broth1/2 t garlic powdersalt and pepper to taste1 t dried parsley
Directions
Thaw califlower(if using frozen, if using fresh pick 1 medium head or 20 oz)
Grate teh cauliflower on a hand grater or with the grating disk of a food processor.
In a very large skillet, saute the green onions and mushrooms in the butter and oil just until tender. Season with salt and pepper and the garlic powder while cooking. Add the grated cauliflower and the broth. (I cooked my califlower in a microwave steamer for 6 minutes first) Bring to a boil, turn down heat to about medium, and cook uncovered until broth has evaporated and caulflower starts to brown slightly. Stir often. Season to taste with parsley.
