Spicy Cauliflower Bake

1 Large head of cauliflower cut into small pieces1 Cup of chopped onion1/2 cup of chopped garlic3 Tbsp Unsalted butter8 oz cream cheese1/2 c. grated Parmesan cheese1 c. shredded cheddar cheese2 Large EggsWater to boil
Place chopped cauliflower, onion, garlic and butter in heavy pot, fill with water, just enough to cover, and bring to boil over med hi heat. Boil until califlower is tender.
Drain, then return to pot, and use an electric mixer to mash the cauliflower, add the cream cheese, Parmesan and cheddar cheeses and eggs. Mix until smooth.
Poor mixture into a 8x8 casserole dish that has been sprayed with a non-stick spray. Sprinkle Paprika over the top of the mixture.
Bake in a 375 degree oven for 30 -35 minutes.
