Lava Carrot Muffins

Ingredients
1/2 c. flour1/4 c. ground flax 1/4 c. wheat germ2 tsp baking sodapinch of salt2/3 c brown sugar, packed2 eggs1/3 cup canola oil1/4 c. raisins1/2 c. chopped walnuts1/2 c. diced pineapple
Directions
Pre-heat oven to 350 F.
Place liners in muffin pan (12).
Combine dry ingredients, including brown sugar in large bowl.
Beat eggs and canola oil until smooth.
Combine eggs/oil with dry ingredients, mix just until incorporated.
Stir in raisins, walnuts and pineapple.
Spoon mixture into muffin cups. Bake at 350 F. Check in 20 min. Bakes in 22-28 min.
