Mashed Onion Potatoes

Ingredients
4 medium red potatoes1/2 cup chopped onion3tsp margarine1 tsp olive oil3 cloves garlic minced1/4 cup skim milksalt and pepper
Directions
Clean and cut potatoes in small pieces. Place in 2 quart pot with the onion and cover with water. Bring to boil and cover until cooked. While potatoes and onions cook, sauteed garlic in olive oil. When potatoes and onions are tender, drain most of the water from the pan and mash potatoes with a potato masher. Add milk, margarine and sauteed garlic. Season with salt and pepper.
