Cleansing cauliflower curry

2 TBSP Olive oil2 large potatoes, scrubbed and cubed1 medium onion, sliced or chopped1 medium head cauliflower, cut into large florets1 cup string beans, fresh or frozen1 sm can Rotel tomatoes or salsa4 cloves garlic, minced1 tsp salt1 tsp curry powder1/2 tsp cumin
Heat olive oil in a large frying pan. Add all indrdients except beans and spices. Heat over medium with lid until potatoes are tender, about 20 minutes. Add remaining ingredients. Toss to coat. Cook an additional 5 minutes.
