Ingredients
Directions
1lbs ground beef2 small cans Diced tomatoes (I like the Del Monte with the zesty green chili)1 can tomato paste (I use the tomato and garlic option)2 small cans light red kidney beans (Drain only 1 can)3 Cups pepper slices- you can use fresh or frozen, I have started using the mixed bag of frozen pepper strips1 cup diced onion1 clove garlic or to taste1-2 packs of chili seasoning depending on taste
1. Mix ground beef with about a 1/4 of a packet of chili seasoning, and garlic.
2. Brown in skillet.
3. Mix all other ingredients into crockpot.(Use a crockpot liner for ease in cleaning)
4. Once thoroughly mixed add ground beef, I do not drain the meat as I us the lean option. This adds to the flavor. However, if you choose to use a higher fat content, I would opt to drain off some of the fat before adding to the other ingredients.
5. Mix and cover.
6. Let simmer in crockpot on low for 5-8 hours. If you would like it done sooner you can cook it on high for about 2-3 hours.
Serving Size: Makes about 14-1cup servings
