Moist low-fat banana-carrot bread

2/3c whole wheat flour1/3 tsp baking soda1/4 tsp salt1/3c splenda brown sugar blend1/2 tbsp butter softened1 egg1 mashed overripe banana1 shredded carrot2 tbsp plain nonfat yogurt1 tbsp davinci sugar free flavor (try coconut, rum, ammaretto etc)1/2 oz dark coconut rum (optional)1 tsp vanilla extract1 tsp ground cinnamon1/8 cup chopped toasted walnuts
combine flour, soda and salt, and cinnamon in a bowl. In another bowl or mixer on higher speeds, combine sugar and butter adding in the egg. Next add banana, carrot, yogurt, flavor syrup, and finally the vanilla extract. Mix well. Stir in nuts and place in a smaller loaf pan baking on 325-350 for about 30 minutes or until bread is just cooked through. For moist effect bread should feel ever so slightly under-done. Allow to cool, cut into slices and enjoy!
