W.W. Spinach & Pepper Frittata

Red Potato, 200 grams Onions, raw, 1 medium*Peppers, sweet, red, fresh, 2 mediumSpinach, fresh, 100 grams Egg, fresh, 6 medium salt peppercold water
Slice onions and potatoes thinly. Chop peppers, and heat in a skillet with 2T. water over med heat. Season with salt & pepper. Cover and heat for 10 minutes. Stir occasionally.
When potatoes are cooked, add the spinach to the pan and continue cooking covered for another 2-3 minutes.
Pour beaten eggs over the ingredients in pan and cook for 5 minutes or until a base is set.
Preheat the grill/oven to high. Place the pan under the grill and cook for 2-3 minutes until the egg is set golden and firm.
Cut into 4 wedges and serve warm or cold.
