Chicken - Veggie Toss

Ingredients
1 onion, chopped1 large yellow bell pepper, finely chopped1 small eggplant, finely chopped3 garlic cloves, minced1/4 cup fat-free, less sodium chicken broth1/4 tsp black pepper2 tbsp dry white wine1 (4-oz) jar diced pimentos, drained3 (6-oz) pkgs Italian-style chopped cooked chicken breast (about four cups)
Directions
Coat a large skillet with non-stick cooking spray and heat over medium-high heat.
Add onion and next three ingredients; saute' eight minutes or until veggies are tender.
Add chicken broth, pepper and wine; cook one minute.
Remove from heat, stir in chicken and pimento.
Serving size: 1 cup each.

    This was pretty bland. The good thing was that the veggies retained some flavor from the liquids, but the chicken had no flavor. It could have been my fault because I used what veggies I had in the fridge. I'll spice it up a bit next time. - 10/5/13
