Buckwheat pancakes (galettes de sarrasin)

Ingredients
4 oz buckwheat flour1 large egg, beatenMilk to mix - about 120 mlwater to mix - enough to give a consistency of double cream
Directions
Mix the flour, egg and milk in a bowl and beat well. Add enough water to get the batter to a consistency of thick liquid cream.

Heat a crepe pan until hot and put two large spoonfuls of batter on the pan, spread thinly and cook until first side is browned. Turn the pancake over (don't toss these, they are too flimsy) and cook until the second side is golden. Add any filling you desire - grated cheese is good, strips of cooked bacon, whatever you fancy.

Serve with a side salad.
