Tuna Salad (Vegetable Medley)

Ingredients
10 oz (aprox 2 5 oz cans) Light Tuna in water2 Large Hard Boiled Egg2 Large Roma Tomatoes1/2 cup chopped Green Onion1/2 cup chopped Red/Purple Onion1/2 cup grated CarrotsI oz (1 serving/ 2/3 spear) Pickle1 tbsp Regular Mayonnaise3 tbsp Plain non fat yogurt1 tbsp Yellow Mustard1 dash Black Pepper (to taste)1 dash Salt (to taste)
Directions
Bring eggs to a boil, cover pot, turn off burner and let sit for 12 minutes while eggs cook.

Prepare veggies and combine with tuna and dressing mix and eggs.

Serving Size: 5 heaping piles of tuna salad.
