2 TBL canola oil1 small onion, chopped1/2 red bell pepper, chopped1 cup brocolli, chopped4 egg whites, large2 large eggs2-3 small potatoes, diced1/2 turkey kielbasi, diced1/2 cup skim milk1/2 cup shredded mexican cheese or cheese blend1 tsp basil1 tsp pepper
Heat 1 TBL canola oil in oven safe pan. Add onion and pepper and brocolli. Cook until soft. Remove from pan. Add remaining canola oil. Add diced potato, garlic, basil and pepper. Cook, stirring frequently, until tender. Stir in kielbasi and cook 2 minutes. Return peppers and onions and brocolli to pan.
In a separate bowl, whisk eggs, egg whites and milk. Pour over contents in pan. Stir in cheese.
Bake in 375 oven until set in middle, about 30 minutes.
Enjoy hot or at room temperature.
