Low Carb Buttercream Icing

Mix all of the ingredients together on low speed. First, your mixture will be foamy, like whipped cream, but if you keep the machine running, you will end up with more of an icing consistency. I cut my butter into four chunks before adding, but you could also cream the butter first. (I would have, but I had already added the cream before I thought to add the butter!)

This has about 4 carbs for the entire batch. For me, this makes about three servings, about 3 T. each. You could certainly decrease the amount of calories by using less. (By Tablespoon, it's about 60 calories plus .5 carb)You need:1/2 cup of heavy whipping cream1 T of unsalted butter1/2 t. vanilla extract5 drops of liquid stevia drops, vanillaFor the liquid stevia, I used Whole Foods brand, which is a touch sweeter than SweetLeaf. You might want to start off with three drops, taste, then add more as needed.
