For Couscous:1 1/2 c uncooked Israeli or pearl couscous1 7/8 cups waterpinch of saltFor Salad:1 small red onion1 small yellow squash1 small zucchini1 small red bell pepper1/2 cup olive oilJuice of 1 1/2 fresh lemons3/4 pound (12 oz) crumbled feta cheeseblack pepper
Cook couscous in water as directed on package. Chop all vegetables into small pieces. Put into bowl. Cover with warm couscous, cover and let steam (do not mix together until veggies have steamed for at least 2 minutes). Top with crumbled feta cheese, olive oil, lemon juice, and black pepper. Chill until ready to serve as main dish or side.
