Spanish Rice

1 cup of uncooked long grain rice3 tbs. onion, chopped1 14.5 oz. can of sliced stewed tomatoes2 tbs. oil (I use Canola)1 cup water1 tsp. chili powder
Heat a 10 inch skillet (that has a lid) over medium-high heat until hot. Add the 2 tbs. oil to the skillet followed by the onion and rice. Stir the rice and onion until the rice puffs up and begins to turn a golden brown. Add the remaining ingredients and stir to combine. When the liquid begins to bubble around the edges place the lid on the skillet, turn the heat to simmer-low and cook for 25 minutes. Do not lift the lid during the cooking time. After 25 minutes remove from heat and fluff the rice with a spoon and serve.
