Honey Mustard Roasted Salmon1 1/2 pounds pink salmon fillets, four 6 oz. pieces, about 1-inch-thick each*1/8 tsp salt and pepper1/4 cup dijon mustard2 Tbsp honey1 Tbsp water1 Tbsp white wine vinegar1/4 tsp dry mustard, hot-variety1/4 tsp garlic powder2 tsp fresh dill, chopped
Coat a shallow baking dish with cooking spray. Add salt and pepper to both sides of salmon and place salmon in prepared baking dish. In a small bowl, whisk together Dijon mustard, honey, water, vinegar, dry mustard and garlic powder. Separate 2 tablespoons of mustard sauce to brush over salmon fillets. Stir dill into remaining mustard sauce and set aside. Roast at 400ºF until salmon is fork-tender, about 15 minutes. Serve salmon with reserved mustard sauce spooned over top.
