Cold Quinoa Salad

Ingredients
1 cup uncooked Quinoa2 cups Water2 cloves of Garlic, finely chopped2 Tbsp Red Wine Vinegar2 Tbsp Extra Virgin Olive Oil1/2 tsp Kosher Salt2 tsp Ground Cumin1 tsp Turmeric1/2 tsp Celery Seed1/2 tsp Fresh Ground Black Pepper1/2 cup, packed, Kale Leaves, trimmed of stems and finely chopped1/2 cup finely chopped Sweet Red Pepper
Directions
Do ahead of time: Combine Water and Quinoa in a saucepan and bring to a boil. Reduce heat and simmer for 15 minutes. The little tails will pop out of the grain when done. Refrigerate until cold.

Combine Extra Virgin Olive Oil, Red Wine Vinegar, Chopped Garlic and the spices in a bowl and whisk together. Let stand.

Finely chop Kale and Sweet Red Peppers.

Combine Quinoa, Dressing, Kale and Peppers in a bowl and mix well. Refrigerate to marry the flavors until ready to serve.

    This was a great summer night meal. I added diced red onion, diced tomato,chopped avocado, and cut back the olive oil to 1 Tbs. I soak the red onion in ice water before adding it in to take some of the bite out of it. I will make this again. - 8/23/12
