Bulgur Wheat & Veggies1 cup cracked bulgur wheat, uncooked1⁄2 cup celery, chopped1 medium onion, chopped1⁄2 cup fresh mushrooms, sliced1⁄4 tsp dill weed1⁄4 tsp oregano2 cups vegetable stock1 Tbsp fresh parsley, chopped2 Tbsp pimiento, choppedSalt and pepper to taste.
In large skillet add 1⁄2 cup stock, vegetables and bulgur wheat. Stir constantly until vegetables are tender and bulgur wheat starts to brown. Add seasonings and rest of stock (1 1/2 cup), cover and bring to boil. Reduce heat and simmer 15 minutes. Stir in parsley and pimiento just before serving.
