Secret Chewy Choc Chip Cookies

3/4 cup unsalted butter1 cup soft brown sugar, packed1/4 cup white sugar2 tsp vanilla extract1 large egg2 cups all purpose flour2 tsp corn flour1 tsp baking soda1/2 tsp salt300g baking chocolate, coarsely chopped
Heat oven at 350 F / 180 C.

Beat butter and sugars until light and fluffy and well incorporated.

Add vanilla extract and egg and mix well.
.
Stir in the flour (no need to sift), corn flour, baking soda and salt.
.
Add in the chopped chocolate pieces.
.
Drop 1 tablespoon sized ball onto the tray and bake for 10-12 minutes.

For an even better treat, sandwhich 2 cookies in between your favourite ice cream flavour for a cookie sandwhich. A sure big hit with the kids at parties! Sandwich the cookies + ice cream in advance and save it in the freezer until you want to serve it. The chewyness of the cookie will remain.

* For flatter cookies, bake the dough at room temperature. Or you can chill the dough beforehand for higher, knobbly cookies that keeps it's shape even after baking.

** Dough can be made 3 days in advance, and whipped out anytime when you feel like having a warm sweet treat.
