MK Yellow Dal (1 Serving = 1 Cup)

Ingredients
1 tbsp canola oil1 medium onion - finely diced2 medium tomatoes - finely chopped1 large handful chopped coriander100g each of grad, moong and chana dal (yellow lentils)3 cloves garlic1 heaping tsp cumin seeds1/2 tsp black mustard seeds1/4 tsp tumeric1/2 tsp Garam Masala2 tsp salt1/2 tsp cumin powder1/2 tsp coriander powder1 small red chili - finely chopped
Directions
Rinse lentils well in running water than soak for 30 minutes, then simmer in 1L water with 2 tsp salt.
Heat oil and add cumin seeds and mustard seeds and stir till popping. Add onion, chili and garlic and cook until onions are translucent - about 5 minutes. Add other spices (except for cumin and coriander powder) and cook for 2-3 more minutes, then add tomato and cook for another few minutes. Take off heat until your lentils are almost cooked, then add them to the mix along with the last two powder spices. Let cook for about another five minutes for flavors to blend then stir in coriander.
