Cabbage-Veggie Soup with Ginger

1 head of cabbage (red or green is fine), chopped2 medium/large carrots, chopped6 or more stalk celery, chopped1 parsnip, chopped2 medium onions, chopped1 medium zucchini, chopped2 medium sweet potatoes, peeled and chopped1 can diced beets, undrained1 Tablespoon fresh ginger root, chopped1 Tablespoon olive oil12 or more cups waterSalt and pepper to taste
Heat olive oil in large stock pot with fresh ground pepper and ginger root
Add chopped veggies and saute until they begin to soften, about 10 minutes
Add water to cover and simmer over low heat 45 minutes
Serve hot and enjoy!
