Pork, Veg, and Curried Couscous

Mushrooms, fresh, 1 cup, pieces or slicesBroccoli, fresh, 1 cup, choppedBaby Carrots, raw, 5 medium*Couscous (dry), 1 cupWater, tap, 1.25 cup (8 fl oz)Curry powder, 1 tbsp*Pork, fresh, loin, center rib (chops), boneless, separable lean only, cooked, braised, 1 cup, dicedGarlic infused EVOO
1. In a saucepan, boil water and add curry powder and couscous. Cook as directed.
2. In a saute' pan, heat EVOO and add all vegetables.
3. Saute' until tender.
4. After couscous is cooked add diced pork and sauted vegetables.
5. Season with salt and pepper to taste.
Serving Size: Makes 4 1 cup servings
