Ingredients
1 c. gluten free oat flour1/2 c. gluten free sorghum flour1/2 c. buckwheat flour1/3 c. tapioca starch1 tsp. baking soda2 tsp. baking powder1/4 tsp. coarse seat salt1 tsp. xanthan gum1 1/2 tsp. pumpkin pie spice3/4 c. pumpkin puree1/4 c. oil1/4 c. brown sugar, packed2 tsp. vanilla extract2 large eggs1 1/2-2 c. almond milk
Directions
Combine dry ingredients in large bowl. Stir to combine. Starting with 1 1/2 c. of milk, combine wet ingredients in a separate bowl. SLowly stir into flour mixture, being careful not to overmix. You want it to be a bit thicker than pancake batter.

Heat waffle iron according to manufacturer's instructions. Lightly spray with olive oil mister before adding batter. Use approx. 1/3 to 1/2 c. per waffle.
