Black Bean Quesadilla

Ingredients
2 Whole wheat Low Carb Tortillas1/4 cup canned black beans3 T. Pace Chucky Salsa (mild or hot, to taste)1/3 cup low fat cheddar cheese
Directions
Makes 1 Personal Quesadilla

1. Preheat oven to 400 degrees.
2. Line a baking sheet with aluminum foil
3. Grate lowfat cheese
4. Lay one tortilla on foil. Spread with beans and salsa. Top with cheese. Be careful not to spread toppings too near edges or they will leak out while cooking.
5. Lay the other tortilla gently on top.
6. Bake for 15 minutes.

    Great basic recipe! I add green pepper and onions as well, and saute them in cooking spray for about 4 minutes, then put into tortilla. - 7/17/09
