Black Bean Chili With Avocado Salsa

Avocado Salsa: 1 medium California avocado, peeled, pitted, and finely chopped20 cherry tomatoes1/4 cup green onions2 TB Lemon JuiceChili:1 can of Black Beans1 can of diced tomatoes2 cups beef stockGreen pepper, .5 cRed pepper, .5 cOnion, .5 cChili powder, 1 tbsp Garlic powder, 1 tbsp Cumin, 1 tsp
To make the avocado salsa: In a large bowl, combine the avocado, tomato, lime juice, Lightly toss.
To make the avocado chili: Meanwhile, heat the oil in a 6-quart Dutch oven over medium-high heat. Add the onion and bell pepper and cook, stirring frequently, for 3 minutes. Add the beans, tomatoes, broth, chili powder, garlic, cumin, and simmer for 20 minutes.
Serve with the avocado salsa & 2 TB sour cream.
