Southern Style Collard Greens

Ingredients
Collard Greens - one bag (washed and bagged collards are the best option) Lean Ham - about 2 cups choppedShallots - 2, choppedBalsamic Vinegar - approx 1/2 cupChicken Stock - approx 2 cupsgarlic - one clove
Directions
- saute shallots and garlic in a pan until done well
- add lean ham and heat through
- add collards to mixture just until they are slightly wilted
- put mixture into crockpot and douse with balsamic vinegar and hotsauce (optional)
- put in enough chicken stock to cover greens
- let cook on low for 8 hours
