Ingredients
1 1/2 cups cooked black beans* 1 shallot, about 2 tablespoons, quartered1/2 bunch cilantro, about 3/4 cup1 Serrano pepper, stem and seeds removed1 clove garlic1 teaspoon cumin seed2 limes, zested and juiced1/4 cup tomato sauce*Note: Warm beans will puree more easily. If you use canned beans, drain and rinse them until no bubbles appear in the water, then microwave for one minute and proceed with the recipe. 1 1/2 cup cooked beans=about 1 14.5-ounce can
Directions
Place all ingredients in a food processor and puree until smooth. Cover and refrigerate.
Serve immediately or refrigerate for up to five days.

    Black beans are my favorite , so high in fiber too , I make this dip all the time , I eat it with veggies, tortillas , tostada , on crackers or just by itself . I made a pot of beans last week & had a different black bean recipe 5 days in a row & they were all delicious - 4/16/13
