Minestrone with Chicken

Ingredients
1 cup chopped onions4 or 5 cloves garlic1 cup diced zucchini1 cup diced carrots1/2 cup diced celery2 cups partially cooked or canned cannellini beans2 cups chopped Swiss Chard or other greens as preferred12 oz chicken breast cooked and diced8 cups chicken broth1 tbsp pesto (if desired)4 - 5 inch piece of parmesan rind optional (I keep the rinds frozen from the ends of the parmesan peice.)
Directions
Saute onions and garlic in a tiny bit of olive oil until just translucent, then add the remainder of the veggies, and salt and pepper to taste. Add the broth, the beans and the chicken. Put in the parmesan rind and cook for about 60 minutes at a low simmer. At the end, about 15 minutes before serving add pasta. Put pesto in at the very end.

Serve with a crusty italian bread!
