Urban Camper Cake

½ a 10-oz package firm silken tofu1 tbsp. vanilla extract½ cup unsalted butter1/3 cup sugar¼ cup brown sugar2 cups graham cracker crumbs½ cup flour2 ½ tsp. baking powder¾ cup skim milk2/3 cup mini marshmallows½ cup chocolate chunks1 7-oz jar marshmallow cream
Preheat oven to 350˚F. Coat a 9” spring-form pan with pan spray and line with a circle of greased parchment.
Puree tofu and vanilla until smooth and creamy
Beat butter and sugars together until smooth and creamy.
Add tofu puree and beat well.
Separately, combine cracker crumbs, flour and baking powder, and add alternately with milk.
Fold in marshmallows and chocolate.
Bake 30-35 minutes, or until a pick inserted comes out clean. Cool completely in pan.
Remove sides of pan.
Frost with marshmallow cream, brown under the broiler 2 minutes
